You Say TomAto, I Say Tomato

There’s nothing quite like a fresh tomato from the garden. Whether it’s your own garden, your neighbors garden, or the farmers market, tomatoes are in abundance right now. Not only are they delicious, but this nightshade also is rich in vitamins and minerals (vitamin A, vitamin C, folate, potassium, iron, calcium, manganese, etc).
Below are some of my favorite recipes for tomatoes.
Stuffed Tomatoes - So yummy! You can use any kind of meat and add other veggies in if you wish.
Tomato Sauce - Tastes great over steamed veggies, zucchini “pasta”, or spaghetti squash. I like to throw some chunks of chicken or ground beef in it too.

Tomato Basil Relish – I like this over pretty much anything (meat, eggs, avocado) or just by itself.

Fried Green Tomatos - I’ve never used this recipe, but it looks WAY better than the one that I do use. Try it and let me know what you think.

Fresh Salsa - Great on eggs, with fresh veggies, and if you want to be a bit crazy you can even go with some plantain chips or sweet potato chips.
To stay a bit more simple you can always just slice up a tomato with any meal for a side dish. Or chop one up and add it to a mixed veggie salad topped with good protein.
We always talk about eating produce that is in season. Well, these are definitely in season and now you have plenty of recipes to keep your palate satiated with different uses for the tomato overload. Enjoy!

Post college she fulfilled her need for competition through endurance races ranging from 5K’s to marathons. Attending Cornell College, she earned her Bachelor of Arts degree in Physical Education: Fitness and Wellness. Prior to Norcal, she has trained in gyms, private training studios, and coached soccer. Jenny has had an amazing opportunity to travel around the country coaching water skiers. Her 7+ years of coaching experience has allowed her to work directly with a wide variety of people; from children trying to discover their coordination to adults wanting to shed a few pounds to professional athletes looking to be the best in the world.
