This recipe is just enough to serve one–but the ingredients aren’t really measured–so feel free to add more or less of anything you like! The ingredients include the Simple Chicken (pre cooked, sliced strips), the pre-shredded carrots, a whole zucchini and some olive oil. Coat a skillet with olive oil over medium heat. While the oil is warming, grab a handful of the shredded carrots and cut them into smaller pieces, then throw them in the pan. Grab a handful of chicken and dice into small pieces and add to the pan. Shred one zucchini into the mix. Stir till the veggies are tender–about 8-10 minutes. Season with your favorite mixture–a touch of curry powder or can of green verde sauce can make this meal new every night. Use this concept as the base for a variety of dinners–you can’t go wrong with vegetables and protein!
This recipe can be modified by adding mushrooms, bell pepper, broccolli slaw, celery, or any of your favorite ingredients that you have on-hand. If you keep your fridge stocked with fresh veggies–and pre-cook your protein on the weekend (or buy it cooked)–you’ll be way more successful at getting tasty meals on the table with little time and prep!
