Primal Pizza!

The crust:

2 cups almond meal (found at Trader Joe’s)

2 eggs

1 tsp olive oil

½ tsp salt

Mix all ingredients together to form the dough and roll out on a non-stick pan as thin as possible (a rolling pin is useful).  Bake crust at 350 degrees for about 15 minutes or until slightly browned.

While your crust is baking, this is the time to prep your toppings!  Your choices of toppings are endless!  I like to fry some bacon and then caramelize onions in the bacon grease…yum!  Defrost some pre-cooked shrimp, chop up and get out those herbs & spices!

Take out pizza crust, slather on some tomato paste/sauce sprinkle a little cheese/goat cheese, bacon, onions, shrimp, Italian seasonings and red pepper flakes (optional) and put back in the oven for another 15 minutes.

Slice up, pair it with a nice green salad and I like to drizzle it all with a little balsamic vinaigrette, a Gluten-Free Beer and voila!  Pizza and Beer on a Friday night!

It wasn’t long after Cindy began working out at CrossFit NorCal, that her interest in the training principals drove her to attend the CrossFit Level 1 training certification. She has since attended seminars such as Olympic Lifting, Performance Development Series with Dutch Lowy, Nutrition with Robb Wolf, CrossFit Kids, Yoga Works Instruction and is now Level II certified. Cindy brings a well-rounded athletic background to the gym—with experience in the team sports of softball, soccer, rugby, as well as the individual events of track and sprint triathlons. Cindy is a role model for healthy living, both in and out of the gym. Her own personal quest for a healthy lifestyle is what makes Cindy an excellent trainer. A seasoned cook, Cindy enjoys making delicious and healthy Paleo/Primal friendly food—and is a great resource for clients in need of nutritional support. Cindy also continues to work for Mark Sisson, offering online nutrition and exercise support and has worked as the head Chef for several of his Primal Blueprint Luxury Retreats. Sharing her love of food and cooking with her clients, is one way Cindy gets to know her clients more personally. When away from the gym, you can find Cindy walking her dog, Hoshi, in the park and spending time with family and friends. She is fortunate to have her older sister, younger brother, a two nieces living here in Chico as well. She is also the co-founder of the Matthew Axelson Foundation created to honor her late husband who was killed in Afghanistan in 2005. The foundation supports military veterans and their families and helps raise awareness for those who fight for our freedoms. Cindy brings her “Never Quit” attitude to the gym and her clients.

  2. I can say, first hand, this pizza is really good. Way better than I expect when Cindy said she was going to make a Paleo Pizza.

  4. I really liked this recipe too, but it came out a little dry when I tried it. However, when I doubled the eggs, it came out *amazing,* and it actually supported the toppings a lot better, too.
