Pizza and Ice Cream – Paleo Style of Course!!

We don’t do a whole lot of recipe posting on this site because we have so many phenomenal resources for great paleo recipes at our finger tips.  However, I can’t pass up sharing these two recipes that I threw together the last couple of days.  I’m not much of a measurer, but I am giving your rough estimates of how it all went down.  Who doesn’t love pizza and ice cream??

 

PALEO PIZZA: (with a cauliflower crust)

There are a ton of paleo pizza recipes out there, from which I have tried several.  Most of the time I end up feeling SO FULL after just one piece because of the amount of nut flower it requires to make the crust.  Well…this is the savior to my paleo problems.  I ate two pieces without feeling like I had a rock in my gut afterwards, it actually tasted like real pizza and it was DELICIOUS!!

Crust Ingredients:

1 Head of Cauliflower

1/2 cup almond flour

2 eggs

1 tbsp coconut oil

 

Toppings: (you can choose from whatever paleo friendly toppings you wish..but here is my list)

8 oz. Tomato Paste (for sauce)

Italian Pork Sausage

White onion

Broccoli

Bell Peppers

Mushrooms

Seasoned with black pepper, oregano and garlic powder

 

Directions:

Preheat oven to 450 degrees.  While oven is preheating, boil cauliflower florets.  Then in a large bowl mash up with fork until rice like texture.  Combine eggs, almond flour and oil and mix together well.  Spread “dough” onto pizza pan (I made the mistake of making it even all around, but I would suggest making it a bit flatter in the middle and thicker on the outside..mine was a bit soft in the middle).  Put pan in oven for 20 minutes or so until edges of crust are browned.  While crust is cooking get all of your veggies cut up and meat cooked.

After crust is done, take out of oven and spread tomato paste over top.  Then put toppings/seasoning on as desired.  Put back in oven for an additional 10 minutes or so until veggies are cooked to desired texture.  Take out, let cool a bit and then devour!

 

PALEO ICE CREAM:

I don’t know if you all have noticed, but it’s been hotter than heck in Chico lately and having a cool treat every now and then is so refreshing.  The other day I whipped this up, unsure of what it was going to taste like…it was AMAZING!!!  Make it tonight!  This serves two.

 

Ingredients:

1 avocado

1 frozen medium banana (or frozen fruit of choice)

1 tsp vanilla

1/2 can coconut milk

 

Directions:

Put all ingredients in to a food processor.  Blend up and eat!  Simple as that and OH SO GOOD!!!  You could get daring and put a little dark chocolate chunks and chopped up walnuts in it too.

With her love for sport and exercise, Jenny chose a career as a personal trainer so she could share her passion of health and fitness with others. Attending Cornell College, she earned her Bachelor of Arts degree in Physical Education with an emphasis in Fitness and Wellness. Prior to Norcal, she has trained in gyms, private training studios, and coached soccer.
