Are you tired of the same old breakfast??? Scramble it up a little!
You can do this with just about anything in the fridge. This is one of my favorite breakfast scrambles and only takes about 10 minutes to make, which is essential for those of us who are in a rush to eat and get out the door every morning! First I cook up a little hot “spicy” pork sausage, then throw in some green onions, mushrooms, and left over BBQd asparagus from the night before. Saute everything together for a minute or two, add your eggs, and cook to your liking. Top with your favorite salsa, and ta-da one delicious scramble!!

Thalin that sounds fantastico! I am totally going to try that! Grazie!
Thanks Thalin, I will definately be trying that out!! Sounds like a great “treat” and a good change too.
Hello from Italy...may I add my suggestion for a very yummy breakfast? Here in Italy breakfast HAS to be “sweet”...no chese, no meat...so what do you do to eat Paleo? well...eggs (ok most Italians frown at eggs too..but wtf?)! but even that needs to be “sweet”, so this is what I worked out:
eggwhites + raw cocoa + cinnamon + some ginger + salt. Mix everything together, possibly use a mixer so to make it nice and fluffy and then pour it in a non-adherent (is this the right word?) without any oil or butter and cook it as if it was a crepe. It’s DELICIOUS!
Let me know what you think!
