I’ve been getting my CSA box (Comanche Creek Farms--530-894-7775) for almost a year. When I started last spring--it was just at the beginning of what I thought was prime time for fruits and veggies, and the box did not disappoint! As we headed into winter I wondered if the variety would remain the same. I’ve been pleasantly surprised each week to find an amazing assortment of produce in my box despite the winter season.

Time has flown by and our 2nd annual Paleo challenge is starting to wind down. As trainers, we have noticed the dedication that you as participants have given to this challenge and your efforts are becoming obvious!!

During one of our recent evening On-Ramp discussions we had client ask about protein bars....and which one is the best one if you are trying to eat Paleo. Those of you that have been around for a while know the answer to that question. NONE. But what do you grab in the morning when you are trying to hustle the kids out the door, get to work on time, AND have more than coffee in your belly till lunch?

I have finally gotten around to cooking the last squash from my original post. My Kabocha squash didn’t quite hold up for the duration--but luckily client Mike S. happened to have a Kabocha variety growing in his garden and brought it in for me!

We all have our favorite go-to chicken recipe...it’s easy...we always have the ingredients on hand...and everyone in the family eats it! Here’s one my favorite ways to get dinner on the table quickly--and it has a little ethnic flare that makes it just different enough to please everyone’s tastes!

Not too many weekends go by that I don’t drop in to Trader Joe’s to do my weekly shopping...but for whatever reason (perhaps the dreary rain, or a mad game of indoor HORSE at the Gower’s, or...best reason yet ... a nap), I didn’t get my shopping done! So---come Monday AM, I was short on food, low on time, and had a late night at the gym...but never fear...Trader Joe’s and my crock pot will save the day.

Admittedly, under the crazy context of this past weekend, food intake was either non-existent, poor quality, or both. Lack of sleep, high stress, and loud drumming.... that is a perfect storm for bad food decisions! If you were part of this mayhem...get back on track and start eating right (and feeling better!) Just before the holidays I posted a blog about SQUASH…those odd shaped starchy vegetables that taste so darn good with just a little butter and salt. However—most of you know by now that I actually LIKE to cook, and look forward to trying new recipes and experimenting with new foods and flavors.
