¼ c. frozen spinach, thawed
Tbsp. diced green chiles, more/less to taste
3-4 forkfuls of sundried tomatoes
Preheat a small fry pan in 350 degree oven. Microwave pkg of frozen spinach for 2 min. Drain small can of diced green chiles.
Whip 4 eggs in a bowl until frothy and then stir in: spinach, chiles, tomatoes, plus small pinch of shredded parmesan.
Carefully remove pan from oven, lightly coat bottom with olive oil. Quickly—before pan cools—pour in egg mixture and sprinkle a little more parmesan over top, then return to oven for 20 minutes.
When cooked through, flip ‘quiche’ onto plate, cut, and eat! Eat half; cover and refrigerate the other half. Eggs reheat great in the microwave.
