Chicken Pizza–you’ll never miss the crust!

Chicken Pizza

Ingredients:

1 lb package chicken ( I used thighs)

1 tbsp Italian seasoning

4 cloves of garlic

3 egg whites

pizza sauce of choice

toppings as you like (sausage, bell pepper, red onion, olives, sundried tomato, feta)

parchment paper

pizza pan

Directions:

Preheat oven to 425

Boil chicken until cooked (10-15 min.). While chicken is cooking, combine egg whites and Italian seasoning in a large bowl.  Finely chop garlic (or use food processor), then add to egg whites and Italian seasoning. After chicken is cooked, use a food processor to chop/puree.  Add the egg white mixture to the chicken and mix well.

Line the pizza pan with a piece of parchment paper.  Place blended chicken mixture in the middle and use your fingers to shape it into a flat (1/4” or less) “pizza pie”.  It may be a little lumpy!  Toss it into the oven for about 10-12 minutes or until light brown.  Pull the cooked ‘crust’ out of the oven and top with your favorite ingredients.  If you use feta and sundried tomatoes, they need to go into the oven for the last 3 minutes ONLY…they will burn if you put them on with all the other ingredients!

Cook for 15-20 minutes.  Check the color of the crust and to see if sausage is cooked thoroughly…When crust is a medium golden brown your done!

Pat any excess grease/oil off with a paper towel before cutting.
